THE SORBETINI RECIPE

THE SORBETINI RECIPE

Lemon has a natural affection for gin but you could try orange or tangerine sorbet now and then, for the sake of change. Other flavors don't work as well with gin and vermouth.

1 oz dry white vermouth
2/3 cup lemon sorbet
1 oz soda
2 oz gin

Add vermouth, sorbet and soda to a blender and blend briefly until smooth. Spoon into Martini glasses and carefully pour on the gin. Stir a little and serve garnished with a slice of lemon.

GEORGIA PEACHSICLE RECIPE

GEORGIA PEACHSICLE RECIPE

The fresh peach is a key ingredient in this delicious cocktail. A ripe, juicy Ontario peach is an ideal constituent, but canned fruit can also be used. Whenever blending ice, use the smallest possible pieces and switch the blender on and off frequently rather than letting it run.

2 oz vodka
1 oz peach schnapps
1 tsp freshly squeezed lemon juice
1 ripe fresh peach, peeled, pitted, chopped
1/2 cup crushed ice

Combine all ingredients in a blender and blend until smooth. Pour into highball glasses. Garnish with a slim slice of fresh peach.

SINGAPORE SLING

SINGAPORE SLING

Originally created at Raffles Hotel in Singapore, the Sling has strangely morphed into cocktail with everything in it, as bartenders combine lime, orange juice, pineapple juice and grenadine, among other ingredients. The original is a much more sophisticated, subtle blend: light in color and taste, it is a perfect summer sipper.

In a cocktail shaker filled with ice, add 1 oz gin, 1/2 oz freshly squeezed lemon juice, and 1/2 oz simple syrup (see recipe below).

Shake sharply and strain into a Sling or highball glass filled with ice. Top with soda water and float 1/2 oz cherry brandy on top. Garnish with cherry.

  • Simple syrup can be made by mixing equal parts white sugar and boiling water. Stir to dissolve sugar and chill. It can be kept in the fridge for week.

BASIL ORANGEADE

BASIL ORANGEADE

You can use frozen juice but it is best made with freshly squeezed orange juice. The basil syrup can be made a week in advance and is also great for poaching fresh fruit.

(for 10 to 12)
Water - 2 1/2 cups (625ml)
Granulated sugar - 1 cup (250ml)
Loosely packed fresh basil leaves - 2 cups (500ml)
12 oranges
Orange vodka - 1 cup (250ml)
1 lemon
Sparkling mineral water - 2 cups (500ml)
Extra basil for garnish

In a saucepan, bring the water and the sugar to a boil, stirring to dissolve the sugar. Boil for 1 minute. Remove from the heat and add the basil leaves, cover and leave to steep for 30 minutes. Remove the leaves and chill.

Squeeze the juice from 10 oranges and pour into a pitcher, add the basil syrup and vodka. Cut the 2 remaining oranges in half and slice, add to the pitcher, then juice the lemon (you should have about 1/2 cup or 125ml of juice). Pour into the pitcher along with the mineral water, then add ice. Stir and garnish with additional basil leaves.

Champagne Granita

Champagne Granita

All you need is a freezer to make this ice. It should be eaten the day it is made for maximum flavor but it will last a couple of days in the freezer. Serve it by itself as a dessert or between courses as a palate cleanser. You don't have to use your best champagne but do use a good-quality dry sparkling wine.

dry sparkling wine bottle - 750ml
water 3/4 cup - 175ml
granulated sugar 1/2 cup - 125ml
1 lemon

Chill the sparkling wine. Place the water and sugar in a saucepan. Remove 4 wide strips of peel from the lemon, making sure that you have none of the bitter white pith. Add to the pan and bring to a boil, stirring to dissolve the sugar. Boil for 1 minute, then remove from the heat, cover and allow to cool. Remove the peel and add 1tbsp (15ml) freshly squeezed lemon juice, then chill.

In a metal 9 x 13-inch (23x32cm) pan pour in the lemon - flavored syrup. Slowly add the chilled wine and stir to mix. Place in the freezer. Stir with a spoon every hour or so to break up the ice into large crystals. (If you forget to stir this mixture, don't panic - even when frozen it will not be solid and will break easily in to large crystals.)

To serve, spoon into chilled glasses. (for 6 to 8)
