COCONUT ICE CREAM RECIPE

This is a very simple ice cream, just mix the ingredients together, chill and churn. Just be sure to use a light coconut milk, as the regular milk is too thick and rich.



400 ml light coconut milk
Homogenized milk
1/3 cup (75 ml) granulated sugar
2 tbsp (25 ml) rum


1. In a large measuring cup, mix the coconut milk with enough homogenized milk to make 2 cups (500 ml) of milk. Stir in the sugar and rum and refrigerate overnight.

2. The next day, freeze in an ice cream machine according to the manufacturer's instructions.

Makes 2 cups (500 ml)
