RHUBARB FOOL RECIPE
A fool is a simple dessert where a fruit
puree is mixed with cream. Leaving the rhubarb in pieces gives more
texture. This dessert can be made the day before serving.
(for 6)
1 Small orange
Granulated sugar - 3/4 cup (175ml)
4 Green cardamom pods, crushed, or 1 tsp (5ml) ground cardamom
Rhubarb, trimmed and cut into 1 inch pieces - 4 cups (1L)
Whipping cream - 3/4 cups (175ml)
1. Preheat oven to 350F (180C).

Zest the orange, then juice it. In an ovenproof pan, bring the orange
juice, zest, sugar and cardamom to a boil, stirring to dissolve sugar.
Add rhubarb, stir then cover and place in oven for 30 minutes or until
rhubarb is very soft.
3. Remove lid and cardamom pods if you are using them. Allow to cool. To
make fool, whip the cream until soft peaks form and gently fold through
cold rhubarb. Place into small dishes or glasses and chill until
serving.
