SIMPLE STRAWBERRY ICE CREAM RECIPE

This ice cream is so simple you might find yourself making it all the time during strawberry season. Just make sure you have very ripe berries.



2 cups (500 ml) - sliced ripe strawberries
1/2 cup (125 ml) - granulated sugar
1 tbsp (15 ml) - lemon juice
Pinch of salt
1 cup (250 ml) - whipping cream
1 cup (250 ml) - whole strawberries, finely diced


1. Puree sliced strawberries, sugar and juice in a food processor then add the salt. Push through a sieve into a bowl and discard the seeds.

2. Heat the whipping cream to just below boiling point and pour onto the sieved strawberry mixture. Stir to combine, and then chill overnight.

3. The next day freeze in an ice cream machine according to the manufacturer's instructions, adding the finely diced berries at end.

Makes 2 cups (500 ml)
