STRAWBERRY MINT CHICKEN RECIPE
I picked wild berries for this springy dish. Fresh greens make the perfect partner.TAKES: 30 MIN | MAKES: 4 SERVINGS
1 Tbsp cornstarch
1 Tbsp sugar
1/8 tsp ground nutmeg
1/8 tsp plus 1/4 tsp pepper, divided
1/2 cup water
1 cup fresh strawberries, chopped
1/2 cup white wine or white grape juice
2 tsp. minced fresh mint
4 boneless skinless chicken breast halves (6 oz each)
1/2 tsp salt
Sliced green onion
1. In a saucepan, mix the cornstarch, sugar, nutmeg, 1/8 tsp. pepper and water until smooth; stir in the berries and wine. Bring to a boil. Reduce heat; simmer, 3-5 minutes or until thickened, stirring occasionally. Stir in mint.
2. Sprinkle the chicken with salt and 1/4 tsp. pepper. Grill chicken, covered, over medium heat 5-7 minutes on each side or until a thermometer reads 165°; brush with 1/4 cup sauce during the last 4 minutes. Serve with remaining sauce. Sprinkle with onion.
