RASPBERRY LEMONADE
(for 12)
Water - 5 cups (1.25L)
Granulated sugar - 2 cups (500ml)
Frozen raspberries - 300g
Freshly squeezed lemon juice (about 6 lemons) - 2 cups (500ml)
Vodka - 1 1/2 cup (375ml)
Extra lemons and raspberries for garnish
In a saucepan, bring water and sugar to a boil, stirring to dissolve sugar. Boil for 1 minute. Remove from the heat and add the raspberries, cover and leave to steep for 30 minutes. Strain, then chill.
Add lemon juice and vodka. Pour into a pitcher filled with ice cubes and add lemon slices and fresh raspberries. Raspberries help sweeten and give this drink lovely color. Frozen raspberries work well, but if fresh fruit is in season use 3 generous cups instead. Fresh fruit is best for garnishing.
